Sundae Cupcakes

Soft chocolate cupcakes, creamy vanilla frosting, chocolate ganache and maraschino cherries!

A classic dessert as a cupcake. We all agree that a sundae needs chocolate sauce, sprinkles and a cherry! This sundae cupcake recipe is with chocolate cupcakes and a classic vanilla frosting. I bet strawberry frosting or sauce would be just as delicious!



Sundae Cupcakes

Ingredients 3/4 cup (94 g) flour 1/2 cup (50 g) cocoa powder 3/4 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 2 large eggs, at room temperature 1/2 cup (100 g) sugar 1/3 cup (65 g) light brown sugar 1/3 cup (80 ml) vegetable oil 2 tsp vanilla extract 1/2 cup (125 ml) buttermilk, at room temperature


For the buttercream 6 egg whites 2 cups (400 g) sugar 2 tsp vanilla 1 1/2 cups (170 g) butter


For the chocolate ganache 1/4 cup (67 ml) hot heavy cream 1/2 cup (80 g) chocolate chips



INSTRUCTIONS

Step 1:

Start with mixing the eggs with both sugars, oil, and vanilla until creamy. Add buttermilk and all the dry ingredients. Mix it until it is just combined. Fill the cupcake batter in a prepared cupcake baking sheet 2/3 full. Bake the cupcakes at 350 °F for about 18 minutes. Let them cool in the baking sheet.

Step 2:

For the buttercream whisk egg whites and sugar in a heatproof bowl and place it on a pot with simmering water (bain-marie). Whisk it continually until it forms soft peaks for 8 minutes.

Step 3:

Take out the water bath and keep whisking the meringue until it reaches room temperature. Mix in the butter in small pieces. Keep mixing it until it comes together in a smooth buttercream. As a last step add the vanilla.

Step 4: Prepare the dark chocolate ganache while the cake is resting in the fridge. In a small bowl add chopped dark chocolate and pour hot heavy cream over it. Let it sit for 3 minutes, then whisk it until it comes together. It should have a smooth consistency but not be too runny.

Step 5:

Decorate the cupcakes with buttercream swirls and place it in the fridge for 30 minutes. Fill the ganache in a drip bottle when it has reached room temperature. Pipe some chocolate drip on the cold cupcakes and garnish with a maraschino cherry. Add some colorful sprinkles!

**Pro Tips**

  • Not in the mood for vanilla? Make a strawberry frosting! I love a strawberry cream cheese frosting or add 1 cup freeze dried strawberry powder to the frosting.

  • Do not be like me and forget the sprinkles! A few colorful sprinkles make these cupcakes a even more fun dessert!
